Barbacoa Pork Street Tacos — Chipotle Style

What is a Barbacoa Taco?
A new twist on tacos for me — barbacoa is usually meat cooked until very tender and shredded. It is usually beef or lamb, but pork is also a great option. Barbacoa is a Mexican dish. It often includes vibrant spices like chilis and garlic. Barbacoa is Spanish for barbeque, and everyone loves a good barbeque.
Start with a Roast
I’m going to explain this as a simple crockpot version. I’m using pork for these barbacoa tacos, but you can use beef, chicken, or lamb.
Heat a couple of teaspoons of olive oil in a pan. Give your roast a quick sear on all sides when it’s nice and hot. Then transfer it to your crockpot.
In the crockpot, put the following:
The meat, of course.
· ¾ cup of beef broth
· 4 ounces of green chilis
· 6oz can of tomato paste (You can use half, but I like the extra tomato flavor and put it in the entire can.)
· two bay leaves
· salt and pepper
Crock-cook the meat on low for about 8 hours or until you can easily shred it with a fork.
Once you have sliced the roast, you can add the sauce below!
